I was trying to decide in how many ways this might be illegal -- sale of human bodily products; handling of bodily fluids (our janitors have to be certified to clean up barf); laws relating to raw dairy ... this seems like a Bad Idea.

Wow, he refers to his wife as \"the mother\"? Also, how much milk is she producing to both feed/nourish her child and produce cheese, which, IIRC, is a large ratio of milk in to cheese out.

This was long a common practice (not the cheese part). Wet nurses were common throughout history, especially during the US's period of the Peculiar Institution.
HIV has extremely low viability outside of a human host, so hopefully the cheesing process would destroy it. Can't say for hardier pathogens, but cheesing does expose the milk to a wide range of temperatures, enzymes, high salinity, it is after all a mean of preservation.

HIV would like not survive the process. However, other bacteria might depending on what they do to make the cheese. I would be very concerned about how they go about this and whether or not the health inspector has approved the whole process.
Not too long ago PETA said we should stop making ice cream with cow's milk and use human breast milk. A big problem with making anything from breast milk is the lack of control over its contents. In addition to bacteria and viruses, breast milk varies from person to person, and even throughout the day, depending on the woman's diet.

If you read the chef's blog, this isn't something he serves at his restaurant - this is something he claims that he did at home, as an experiment using frozen stored breast milk, and it makes a really tiny quantity (as you would expect from two cups of milk).
Humans just don't produce as much milk as cows - you'd have to pump and freeze for a LONG time to get enough milk to make any significant quantity of cheese. And then we're assuming Mom isn't nursing the baby. (Modern dairy cows make way more milk than they need to feel a calf.) The stuff about the flavor changing is also silly - human diets are a lot more varied than cows', so unless this guy is putting his wife on particular diets for days on end, he's not going to be able to make any connection between diet and milk.

I don't understand why everyone is so grossed out. We drink breast milk as a child. It's made for us to drink. Cows milk, not so much.

For one thing, turning human females into dairy animals for other people's consumption troubles me a lot more than turning COWS into dairy animals for other people's consumption.
Secondly, breastmilk is fine and dandy and I've been producing it for nine months, but I'm not letting anyone ELSE feed my baby. That's a human bodily product and boy would I want a lot of testing before I'd be convinced of the safety of someone else's boob juice for my baby. Similarly, I'm not particular interested in consuming someone else's milk myself without quite a lot of testing. (And pasteurization.)

This reminds me of a project my buddy and I struck out on to find the perfect white russian. We did a double blind taste test varying the milk product used in each one. We included skim, whole, rice and soy milk, and included baby formula to be thorough. We wanted to include breast milk, but did not know how to aquire any without sounding creepy or putting ourselves at risk. The baby formula was the undisputed winner, which makes us think the breast milk would be ultimate.
The dilemma we face is if we can aquire a small amount, we may not want anything else ever again, and we would be faced with trying to get more... \"Hey sis, can I get another dose from ya? I need it real bad...\"
